Simple Matcha Tiramisu

Ingredients

2 tsp Claire + Charles Matcha

40ml approx. hot water

250g mascarpone, room temp.

50g white sugar

2 eggs

1 x packet ladyfingers

Half a tsp C+C matcha powder for dusting

 

Instructions

1. Separate the egg whites from the yolks. Set aside the egg whites and beat the yolks with sugar until pale.

2. Add the mascarpone gradually to the bowl with yolks and whisk.

3. In a bowl, whip the egg whites until stiff.

4. Add 1/3 of whipped egg whites to the yolk mixture and mix well with a rubber spatula.

5. Add another 1/3 of egg whites and fold. Then repeat the process. Do it slowly and gently.

6.Make matcha: sift matcha into a small bowl and pour hot water. Whisk until homogenous.

7. Dip the ladyfingers quickly (1 or 2 seconds) into the matcha

NOTE: The ladyfingers should not soak for too long in the matcha or they will get soggy.

8. Arrange them so that they cover the bottom of the dish. Then spread the mascarpone mixture over the ladyfingers.

9. Add another layer of ladyfingers and then top with more mascarpone cream.

10. Allow to rest overnight for more than 4 hours in the refrigerator

11. Dust with C+C  matcha right before serving.
